With multiple projects in the works, Kristen Bell is in high demand. But she’s managed to find success while still maintaining her sanity — with a little help from Scrabble.

KRISTEN BELL is worth the wait. She’s been doing so much filming and traveling and so many photo shoots that we’ve had to reschedule our chat four times. But when we finally connect, oh man, pay dirt. In fact, she extends our conversation well past its hour expiration just so we can gab longer.

It’s no surprise that Bell, 29, is so hard to pin down — she’s juggling movie roles, voiceovers for Gossip Girl, and guest spots on shows like Starz’s Party Down. But what is surprising is how down-to-earth, hilarious, and normal she is despite being Hollywood’s newest “it” girl. This month, she stars in When in Rome opposite Josh Duhamel and her real-life boyfriend, Dax Shepard.

Let’s talk about When in Rome. You’re in a guy sandwich — not a bad place to be.
It was a pretty dreamy scenario. It’s a romantic comedy with one girl and five guys. My character gets a little tipsy in Rome and takes some coins out of a fountain as souvenirs. She doesn’t realize the fountain is enchanted, and the five guys who threw the coins in and wished for love — she now holds the key to their love.

Sounds like the perfect date movie.
I just saw it, and it far exceeded my expectations. I was so excited when I saw it. I knew what was coming, but it still surprised me. At the same time, it’s a romantic comedy that has a lot of testosterone because the majority of the cast is men, and there are so many funny guys that it’s definitely not too girly.

Speaking of movies, any updates on the Veronica Mars film?
I’ve been very vocal about the fact that I would be on board in any capacity. [Creator] Rob Thomas is as well, and he wrote a script but was told that there’s no enthusiasm to make it right now, which in movie-studio-speak means they don’t think they’ll make their money back. So when I get Twittered by fans, I always say, “The only thing we can do is let them know that people will go see it and keep talking about it. Because then in a year, when they’re like, ‘Gosh, [the fans] really won’t let this die,’ then maybe they’ll reconsider.”

Your schedule is packed with movies and TV series and photo shoots and interviews. Are you the queen of multitasking?
Yeah, I definitely am. But the one con to being an excellent multitasker is that sometimes I can’t stop. Sitting down to watch a movie can make me very uncomfortable because my body wants to multitask. So I’ll take up my knitting and try to watch TV and knit at the same time or try to return emails and watch a movie at the same time. My friends are like, “Stop. Just breathe.”

How have you learned to just breathe?
The weird thing is that until you do it wrong, you don’t really know how to do it right. When I was on Veronica Mars, I made a lot of mistakes — I had no personal life. This business is very cutthroat. There are a million girls who are more talented, prettier, and willing to work harder, and you have to really stay on top of your game. But it’s also a business that lets you feel wonderfully creative and satisfies you. So [back then], I railroaded myself into having no social life and constantly just working, working, working. And then I realized, Oh, that’s not how I want to live.

I hear that to chill out, you like to cook.
Yes, I love to cook, oh my gosh.

What’s your best dish?
Well, tonight I am cooking a shepherd’s pie.

I also hear that you play a mean game of Scrabble.
Love Scrabble. Especially Scrabble on the iPhone. That’s all Jason [Bateman] and I did during Couples Retreat. The key to Scrabble is memorizing the two-letter words.

This is not typical Hollywood starlet behavior, you know — board games and pie.
I’m much more inclined to be stimulated by good conversation or by intellectual conversation or a good board game. I don’t really stay up that late, and if I am up, I like to be in the comfort of my home. I’m not very much into going out.

I think that’s a positive attribute in a town where a lot of people make poor choices and end up as cover stories.
I think it is, too, but I feel like the going-out scene has been so glamorized recently, and not that there’s anything wrong with it, but for me, I feel like I’m not searching for anything. I’m completely satisfied in my life.
