Minimalism might look good, but maximalism is more fun. Two newcomers bring it on. In New York, 325 SPRING STREET (212-414-1344) celebrates chef Clement Bruno, dubbed “King of Truffles” at his Chez Bruno in Lorgues, France, for handling 2,200 pounds annually. Dine decadently on truffles teamed up with baked potatoes, foie gras, even upscale grilled cheese. In Chicago, SUSHI SAMBA RIO (312-595-2300) unites the cuisines of Japan, Peru, and Brazil in a theatrical room by hip designer David Rockwell. Sushi, ceviche, and caipirinha bars, a deejay located one story above the crowd, and a rooftop lounge send this place over the top. Who could ask for anything more?
